Almond Pancakes




Serves 2


INGREDIENTS:


1/2 cup almond meal

1/2 cup almond/coconut milk

2 free range eggs

1/2 tsp baking powder


METHOD:


1. Whisk all ingredients together.


2. Place a pan over medium heat. Add a drizzle of oil to the pan.

3. Add a large spoonful of mixture to the pan, and cook pancakes. Flip once each side is bubbly and golden underneath.


4. Serve with maple syrup.
