Caramelised Apple Pancake

Serves 4 Small Servings

3 apples, thinly sliced

3 eggs

1/2 cup flour

3/4 cup almond meal

3/4 cup any milk

5 tbs maple syrup

50g butter or dairy free spread

1 tsp baking powder

1/2 tsp cinnamon

1/4 tsp salt

  1. Preaheat oven to 200 degrees celcius.

  2. In a bowl, whisk together eggs, Flour, almond meal, milk, baking powder, cinnamon and salt until smooth.

  3. Place an oven proof pan over medium heat, add a drizzle of any oil, and add the apples. Sauté for a few minutes, stirring until golden. Then add the butter and maple syrup, and stir through. Turn off heat.

  4. Pour the pancake mixture over the apples. Place pan in the oven, and bake pancake for 12-18 minutes, or until golden brown.

  5. Cool pancake in a pan for five minutes, then invert onto a plate.

  6. Serve as is, or with yogurt and berries.
