Carrot + Cumin Fritters

Makes 9 Fritters


2 grated carrots

2 free range eggs

1/4 cup ground flax

2 tbs almond meal

1/2 tsp ground cumin

1/4 tsp salt

1/4 tsp pepper


1. Add all ingredients to a bowl and mix until combined.

2. Place a pan over low-medium heat. Add a drizzle of oil.

3. Place tablespoons of the mixture into pan, and flatten slightly to create Fritters.

4. Cook each side until golden brown, flipping in between. Place on paper towel to cool.

5. Serve with mint yogurt, and enjoy.
