Chewy Almond Biscuits

Makes 14


2 1/2 cups almond meal

1 tbs tapioca starch

1 tsp baking powder

1/2 cup brown sugar - firmly packed

1/4 cup butter - melted

3 tbsp water

1 cup flaked almonds

1 tbsp icing sugar (optional)


  1. Preheat oven to 180 degrees celcius.

  2. Mix together the almond meal, tapioca starch, baking powder, brown sugar, butter and water.

  3. Wet your hands, then roll mixture into 1 tbsp balls. Toss to coat with flaked almonds. Press to flatten slightly.

  4. Place onto a lined baking tray, and bake for 10-15 mins until golden brown.

  5. Allow to cool for fifteen minutes on the tray, then add to serving plate and dust with icing sugar.

  6. Enjoy! Store in an airtight container.
