Chewy Almond Biscuits

Makes 14
INGREDIENTS:
2 1/2 cups almond meal
1 tbs tapioca starch
1 tsp baking powder
1/2 cup brown sugar - firmly packed
1/4 cup butter - melted
3 tbsp water
1 cup flaked almonds
1 tbsp icing sugar (optional)
METHOD:
Preheat oven to 180 degrees celcius.
Mix together the almond meal, tapioca starch, baking powder, brown sugar, butter and water.
Wet your hands, then roll mixture into 1 tbsp balls. Toss to coat with flaked almonds. Press to flatten slightly.
Place onto a lined baking tray, and bake for 10-15 mins until golden brown.
Allow to cool for fifteen minutes on the tray, then add to serving plate and dust with icing sugar.
Enjoy! Store in an airtight container.
