Corn Fritters

Makes 8 small Fritters
1 x 400g can corn, drained
1/4 cup plain flour
1 tsp baking powder
2 free range eggs
Handful of chopped parsley (optional)
Salt and pepper
1. Mix all ingredients together, until well combined.
2. Then place a pan over medium heat, and drizzle with oil. Add spoonfuls of mixture to the pan, and cook over medium heat. When golden brown, flip, and cook the other side.
3. Repeat with remaining mixture.
