Peach, Haloumi + Quinoa Salad

Serves 4

3 peaches, sliced into thin slices

3 cups of cooked quinoa - I used Fermentanicals Quinoa

350g Haloumi, sliced into strips

1/4 cup toasted pepitas

1/4 cup roasted almonds, chopped

3 cups of rocket

1 handful of basil, chopped

4 tbs olive oil

3 tbs white vinegar

2 large pinches if salt

1/4 tsp cracked black pepper

  1. Cook quinoa according to packet directions. Leave to cool.

  2. To make dressing, whisk together olive oil, vinegar, salt and pepper.

  3. Place a pan over medium heat. Add a drizzle of oil. Cook Haloumi slices until golden on each side.

  4. Add quinoa, rocket, basil, chopped almonds, and pepitas to a large bowl. Drizzle over dressing and toss through evening.

  5. Divide salad among plates, and top with golden Haloumi and peach slices. Enjoy.
