San Choy Bau


Serves 2

INGREDIENTS:


2 cloves garlic, minced

2 tsp grated ginger

1 carrot, sliced into small cubes

1 cob of corn, sliced

1 handful of green beans, sliced

250g firm tofu, crumbled

6 lettuce leaves

1.5 tbs soy sauce

1 tbs honey or maple syrup

2 tbs sesame seeds

2 tsp sesame oil

1 lime


salt + pepper to season

chilli flakes to serve


METHOD:

1. Place a pan over medium heat, and add a drizzle of your choice of oil. Then add your crumbled tofu. Stir fry until light golden in colour.

2. Now add in your sesame oil, sesame seeds garlic and ginger, and cook for a few minutes.


3. Next add your carrot, corn + green beans and stir fry. Then finish with your honey and soy. Taste, and season with salt and pepper if needed.


4. Spoon the mixture into your lettuce leaves, and finish with a squeeze of lime and chilli flakes.
