Sweet Potato Quinoa Balls

These delicious Sweet Potato Quinoa Balls are a brilliant vegan dinner option! They are simple to make, and incredibly satisfying.
Serves 4
INGREDIENTS:
Quinoa Balls:
1 cup cooked quinoa
1.5 cups cooked mashed sweet potato
1 finely chopped garlic clove
1/4 cup chopped parsley
salt and pepper to taste
Sauce:
2 tbs tahini
2 tbs natural or vegan yogurt
1.5 tbs lemon juice
2 tsp maple syrup
1/2 garlic clove, finely chopped
METHOD:
1. To make sweet potato balls, mix together all ball ingredients until a rough dough forms.
2. Preheat oven to 200 degrees celcius, and line a tray with baking paper. Roll dough into 1 tbs sized balls and place on lined baking tray.
3. Drizzle with your choice of oil. Place in the oven to cook for 20-30 minutes or until golden and crisp. Remove from oven, and place sweet potato balls on a wire rack to cool.
4. To make sauce, mix all ingredients together until smooth. Serve sweet potato quinoa balls with tahini sauce on the side.
