Zucchini + Quinoa Fritters



Serves 8


INGREDIENTS:


2 small zucchinis (grated, and liquid squeezed out)

1 cup of cooked quinoa

2 tbs gluten free flour

2 free range eggs

1 tsp baking powder

Handful of chopped herbs

Salt and pepper


METHOD:

1. Mix all ingredients together.

2. Place a pan over medium heat. Add a drizzle of olive oil.

3. Add spoonfuls of fritter mixture into pan and flatten to look like pancakes. Cook until golden brown underneath, then cook and flip other side. Store in airtight container.
